My mother used to make quince jam too, I'm not sure if that was the same recipe as from Mouse, but I loved it :>) Neat capture, good luck!

OK here goes..Quince Preserves. Ingredients..6 lbs quinces, 4 lbs. sugar,1 quart quince water,3 lemons. (you have to read instructions to understand the "Quince" water item) 1. Wipe, quarter, core and pare quinces. 2. Place in kettle, add cold water to nearly cover; cook slowly until very tender; drain. (Retain the water for the next step) 3. Make syrup of sugar and water in which quinces were cooked. 4. Add fruit, cover: simmer until fruit is a rich red colour-about 2 hours. 5. Add lemon juice: cook 5 minutes longer. 6. Bottle and seal. The cookook I got this from was originally printed in 1923. Have fun! Mouse

They really are quite pretty. When I was a child in England, my Grandmother used to make Quince jam. I have a recipe for Quince preserves if you would like to try it. Only 4 ingredients. Let me know. Mouse (Fay)
